Access All Characters:

Goto the "Main Menu" and enter the following:
Left, Left, Circle, Circle, L2, Square, Right, R2
Access All Courses:

Goto the "Main Menu" and enter the following:
Left, Right, Left, Right, Circle, Circle, R1, Square
Unlock Movie Option:

Goto the "Main Menu" and enter the following:
R2, R2, L1, L2, L1, R1, R1, R1
Alternate Costumes:

Goto the Skater Selection Screen and while holding L1,
choose "Skate"
